Miss Macaroon launches in Birmingham
A Birmingham pastry chef has launched a social enterprise producing macaroons. Rosie Ginday, who supplies to customers including the Chameleon bar in the city, said she plans to grow the business to offer employment to ex-offenders.
Ginday, who trades her products under the Miss Macaroon brand, has secured orders from the Chameleon bar and restaurant and an American-themed bakery. She said she will now target food fairs, fashion events and retailers including Selfridges and Harvey Nichols.
There are also plans to use the business to give employment and training opportunities to young care leavers, ex-offenders and individuals not in education, employment or training.
Ginday, who has trained under Michelin-starred chef Glynn Purnell, said: "Macaroons, which have a crisp outer shell and rich creamy interior, are extremely popular in the cosmopolitan cities of London, Paris and Milan and I'm hoping we can create a similar culture right here in Birmingham and the West Midlands.
"University College Birmingham is letting me use their facilities to produce them at the moment and so far we have a growing list of five flavours."
The Miss Macaroon line currently includes strawberry, orange, passion fruit, dark chocolate and white chocolate flavours.
